I wanted to verify that once I input the collected data into either the UFORE or STRATUM model that I then email the data for processing???

It depends
In STRATUM, everything is done by the desktop application. As soon as you have configured the project and loaded in the data, you are ready to go.
In UFORE, you configure the project and collect your field data, then use the tool in the UFORE Shell that will automatically use FTP to transfer your data to the FS Unit in Syracuse for processing and then bring back the results when they are ready.
